In the vineyard: Grapevines of an average age of 40 years, on a hillside with a soil of limestone veins and slate.
- In the cellar: Grapes picked by hand, destemmed and crushed by foot. Spontaneous fermentation in large old wooden barrels, a small part with the skins, 1 year of maturation in old wooden barrels, not clarified and filtered, bottled without sulphites.
