Arnaud Chapuis shows how beautiful and exciting the Aligoté grape (for a long time a bit of a neglected child of Burgundy) can be. In 2014, Arnaud took over the 1.5 hectares of Pinot Noir and Aligoté orchards from his grandfather. Exciting, because until 2011 he was not at all involved in making wine, he worked in the marble quarries of Comblanchien. Near the small town of Échevronne, on the borders of Pernand-Vergelesses, he now cultivates 3 hectares of fields, which are characterized by the high level of grass that he allows to grow freely through his orchards. He also has some pear and apple trees from which he makes cider and poiré, although it is mainly for his own use. As a pure vin nature maker, he works completely biodynamically, adds nothing at all and everything is done by hand. The vines are remarkably far apart and grow remarkably high. It is partly for this reason that - unlike many winegrowers in Burgundy - Arnaud harvests very low yields, only 15-20HL/ha.
All wines bear the same label with the title "Ouverture". Pay close attention, it can be confusing but the content is really different! The minimalist drawings were designed by Arnaud's son, Yohan.
