Jonathan was at least surprised when he found out -years ago- that you are allowed to add more than 200 additives as a winemaker. Now he is one himself and naturally chooses not to. It results in crystal clear terroir wine. Sarrandières is deliciously crisp vegetal, with ripe forest fruit, elderberries & broken twigs. Cheerful and in all its entirety enormously elegant. Stop me!

- Grape variety(ies): 100% Cabernet Franc planted in 1999. Very stony top soil, mainly tuff. Plot on a slope in the middle of the Puy Notre Dame hill (73 meters altitude), exposure to the southwest. Manual harvest.

In the cellar: All grapes are destemmed, spontaneous fermentation and maceration for 10 days in wooden barrels, soft 'infusion' of the skins, 7 months maturation in oak barrels, bottled without clarification, filtering and sulphite.
