Description
An orange, naturally made resin wine from Macedonia (Greece). You will not come across it quickly in the Netherlands. For at least 3000 years, Retsina has been the national drink of the Greeks. Retsina means resin and since ancient times this wine has been stored in amphoras that were sealed with the resin of pine trees. This gave the wine a natural resin taste. This retsina from Kamara Estate is also produced biodynamically without the addition of sulphur and without clarification or filtering.
Completely different from Kamara's traditional Retsina , this Nimbus Ritinitis Orange. A wild wine and bright yellow / orange opaque. Intense spicy notes in the nose of ginger, lots of ginger, together with thyme, lavender and oregano. Maybe a bit of a shock at first but definitely worth a try. A little extra oxygen brings the wine nicely into balance and brings air into the spiciness.
The recipe for this orange retsina comes from Dimitrios' great-grandfather, who made this wine a century ago in Eastern Rumelia, the southern part of present-day Bulgaria.
Kamara Estate. The Kioutsoukis family, led by Dimitrios and his daughter Stavroula, produces pure wines based on biodynamic principles. They themselves see biodynamics primarily as an intermediate phase towards complete permaculture, an ecologically sustainable system in which the estate is in complete harmony with nature. The aim is to produce wines that are both versatile and an expression of this philosophy and terroir with as little intervention as possible.

In the vineyard: Orchards fully organically and biodynamically cultivated. Terroir of salty clay and loam. Orchards located on the East at an altitude of 140 meters.
In the cellar: Skin maceration together with the must in stainless steel for 5-8 days at a low temperature, after which the grapes are destemmed. Fermentation of the must at 18-21 'C for 20 to 30 days. During the fermentation process, a high-quality pine resin from the mountains of the island of Evia is added, faithful to the authentic retsina recipe. Spontaneous alcoholic and malolactic fermentation. Soutirage and maturation for 3 months in old barriques. Unfined, unfiltered. Without addition of SO2.
