Certainly not an aligoté to dilute the cassis. That was once. Clearly a product of a slow pressing and a short maceration of 24 hours. Only the finest juice was used and we smell delicious notes of ripe quince. An aligoté like you have never tasted before. Very clean style. Forget everything you think you know about Burgundy, this is a new reference.

In the vineyard: Grapes from different plots between 10 and 90 years old. Harvested by hand. Rows and vines are planted well apart. No ploughing for a lively topsoil.
In the wine cellar: After the harvest, the grapes go directly through the press. However, a very slow pressing of 22 to 48 hours. This way, the grapes still enjoy a short maceration period. Then the must is vinified in the cellar of Arnaud's house in Détain.
