Domaine Huet was founded in 1928 by Victor Huet and his son Gaston. For the last 30 years, the company has been in the hands of Noël Pinguet, son-in-law of Gaston. In total, the domain covers 35 hectares, divided between the vineyards Le Haut-Lieu, Le Mont and Le Clos du Bourg.
The grapes are not destemmed, pneumatically pressed (softly pressed, 2 bar) for 3.5 to 5 hours. The must ferments in oak barrels of 225 and 600 litres, or in steel vats at 14 to 17°C for 2 months, with yeast culture from the vineyard or present in the cellars, so no industrial yeast cultures. No malolactic fermentation, this preserves the freshness and finesse of the Chenin. In April after the harvest, bottling follows, after a few soutirages and only a light filtering. This can cause some sediment.
