Description
Intense Grechetto with skin maceration, obtained by harvesting at two different times of the year. This gives the wine two faces: freshness and finesse on one side & intensity, complexity and structure on the other.

In the vineyard: Very steep terraced vineyards in Torgiano at 200-300 meters above sea level with a subsoil of sandy loam. Poor soil with a high percentage of limestone. High temperature differences between day and night, especially in September and October. The vines are 40-45 years old. Manual harvest.
- In the cellar: First picking mid-September. This batch remained on the skins for 3 weeks. Second batch was picked early October and remained on the skins for 2 weeks. Pressed in an old vertical press. Spontaneous fermentation without temperature control in small concrete tanks. The two batches are then combined and matured for another 10 to 11 months on the dead yeast cells, with regular bâtonnage. Bottled during 'Waning Moon' (moon phase with clear sky = high pressure). No clarification, no filtration, minimal use of sulphites.
