Description
Spätburgunder has been planted in the Palatinate since the 16th century, and is still above average. Monsieur Loup also has it, in a Grand Cru vineyard. The taste is also Grand Cru: Subtle expression of small red fruit: raspberries, fully ripe cherries, something smoky. Nice volume, somewhat fleshy but ultimately light and digestible. In the vineyard: Biodynamic farming. Grapes from the Grosses Gewächs vineyard Laumersheimer Steinbuckel , replanted in 2013, loess and clay soil, limestone soil. Organic since 2017. Grapes hand-picked.

In the cellar: Spontaneous fermentation for 21 days with 1/4 whole bunches in an open vat, occasional pigéage. 18 months maturation on the lees in used wooden barrels, not filtered and clarified, bottled on a full moon day.
