Description
This Catarratto is an aromatic wine with a kick: slightly smoky with notes of soft white fruit, blossom, citrus and a long-lasting aftertaste.
Valdibella is a cooperative where the winegrowers still have a say in the management and style of the wines. There are 6 winegrowers responsible for the 38 hectares of vineyards. They work as naturally as possible. The vineyards are located between 300-500 m altitude in a hilly area between Camporeale and Monreale. 'Regosuoli' (brown) top layer with a lot of clay (rich in calcium, lime). Yield 50hl/ha, manual harvest in small containers. Only wild yeasts and natural malolactic fermentation are used. No filtering, no sulphites added.

- In the vineyard: Fields located at 250-350 meters above sea level, on steep slopes. Harvested entirely by hand. Calcareous clay soil and exposed to considerable temperature fluctuations.
- In the vineyard: Grapes completely destemmed and crushed. An extra bit of grape must from a few days earlier is added to the juice and pulp before fermentation. 20 days fermentation at 15'C. 6 months maturation in stainless steel. Without addition of So2 and unfiltered.
