Description
The Prosecco Frizzante 'Col Fondo' from Wild Nature is made according to the Traditional Method (second fermentation in the bottle without disgorgement). This results in a characteristic deposit of yeast (fine lees) at the bottom of the bottle. The wine is made from the Glera grape, which has a wonderfully juicy character in this region. It is a wine with a floral side, but there are also many fresh fruit tones such as apple, citrus and white peach to discover. Due to the longer contact with the yeast cells, aromas of freshly baked bread can also be found in the wine. Because you drink the Prosecco together with the 'fine lees', the wine has a fuller body than the Prosecco Frizzante that is not made in the Col Fondo way.
Before opening the bottle, shake the fine lees well through the wine, so that it becomes cloudy (and the lees is evenly distributed over the contents of the bottle). Do not shake like a whipped cream can, a quick turn is sufficient.
The Wild Nature winery is located on the flat part of the Veneto region, near Venice. The area around it is an oasis of wilderness, full of original vegetation and animals. This area has a rich history and a very special soil, formed by sedimentary deposits, which give all their wines a characteristic minerality. Wild Nature is a pioneer in the field of organic grape cultivation, they have been working in this way since 1974. The winery emphasizes the care and respect they feel for the soil through their labels, on which you can see all kinds of wild animals that inhabit their estates.
Preserving biodiversity is an important part of the winery's philosophy. They have worked to create a biotope around the farm (by planting hedges, ponds, copses and tree-lined banks) that encourages the natural presence of all kinds of animals. There are many hares, foxes, pheasants, ducks and other migratory birds around the farm.
