Description
This cuvée from the youngest vines is the first wine of Jonathan Pabiot to be bottled each year, hence the name Prélude. A good introduction to the style of the house. Expressive Sauvignon Blanc with characteristics of the (fire) stony subsoil, citrus and grass.
Jonathan is the 5th generation winemaker in the Pabiot family. After working in the Languedoc at Leon Barral, he returned to the family estate at the age of 21. The "domaine" is situated on the hills in Les Loges, the highest part of Pouilly Fumé, close to Sancerre. The family cultivates vineyards from three different soils: Kimmeridgian Marl (Marnes Kimméridgiennes), Portland Limestone (Calcaire Portlandien) and Silice-Argilo Silex (flint). Jonathan produces only 12,000 bottles per year.

- In the vineyard: Organic since 2006, BD since 2016. Exceptionally high planting density (10,000 vines per ha). Young vines (between 4 and 10 years old). Grapes used for this wine come from vineyards of all three different subsoils, all with a south/southwest exposure. Manual harvest.
- In the cellar: Slow fermentation at low temperature by means of vineyard-own yeasts. Maturation of 6 to 8 months on the "lie" in stainless steel and concrete. No filtering, no clarification. Minimal amount of sulfite.
