Description
Very intense Pouilly-Fumé with a lush finish. The wine has a perfect balance between power, complexity and elegance. There is also a clear salty undertone. The grapes grow in a steep terraced vineyard, near the Loire. As a result, the grapes benefit from a cool breeze in the afternoon and cold nights. This enhances the expressiveness of the wine.
Jonathan is the 5th generation winemaker in the Pabiot family. After working in the Languedoc at Leon Barral, he returned to the family estate at the age of 21. The "domaine" is situated on the hills in Les Loges, the highest part of Pouilly Fumé, close to Sancerre. The family cultivates vineyards from three different soils: Kimmeridgian Marl (Marnes Kimméridgiennes), Portland Limestone (Calcaire Portlandien) and Silice-Argilo Silex (flint). Jonathan produces only 12,000 bottles per year.
