Description
Rich, aromatic style Pouilly-Fumé, the only wine in Jonathan Pabiot's range with wood aging. Golden yellow color, class and a serious structure. Storage potential of about 10 years.
Jonathan is the 5th generation winemaker in the Pabiot family. After working in the Languedoc at Leon Barral, he returned to the family estate at the age of 21. The "domaine" is situated on the hills in Les Loges, the highest part of Pouilly Fumé, close to Sancerre. The family cultivates vineyards from three different soils: Kimmeridgian Marl (Marnes Kimméridgiennes), Portland Limestone (Calcaire Portlandien) and Silice-Argilo Silex (flint). Jonathan produces only 12,000 bottles per year.
