Description
Fresh, fruity, floral and spicy. The name of the wine is due to the experimentation of different grape varieties. The vineyard, biodynamically cultivated and planted with syrah, was very floral and the must smelled very clearly of violets.
The soil is clay-limestone, stony, and has both good filtering power due to the presence of calcareous fragments, as well as good water retention thanks to deep red clays.
The originally Swiss family Stolt settled in 1998 in the northern tip of Pic-Saint-Loup in Roussillon, where it is slightly cooler than in the rest of the region. This area is adjacent to Languedoc, the vineyards are located in both regions. The 8 hectares of Mas Foulaquier have been fully biodynamically cultivated since 2006 and in the cellar they work 'naturally'. Everything is taken care of in the most natural way possible. No additives, no additions to the wine. Balance, finesse, good acidity, soft wood maturation and lots of fruit are the main characteristics.
Long maceration at low temperature. No intervention during fermentation. No addition of sulphur, yeast. Only a low dose of sulphites before bottling. 24 months in used wooden barrels. The wine is then bottled by gravity with an air vacuum printer, in maintaining the quality of the wine as much as possible.
