Description
Cour-Cheverny is a small appellation (only 48ha in total!) and the obscure white Romorantin grape is the only one allowed to be used. Do get to know this rare grape, which smells subtly of peach, bruised apples, and a hint of white tea. It continues in the mouth as a sleek, friendly wine, with an uplifting soft tea-like bitterness.
Father Roger Tessier started planting vines next to his asparagus fields in 1961. Son Philippe took over the management of the vineyards in 1981 & expanded the wine growing to 24 hectares, divided over 2 appellations, Cheverney and Cour-Cheverny. Since 1998 the vineyards have been farmed organically, the Ecocert certificate followed in 2002. Philippe grows Sauvignon blanc, Chardonnay, Côt, Pinot Noir, Gamay and of course the local Romorantin.

- In the vineyard: V ineyards with a soil consisting of clay and sand . Vines between 25 and 40 years old. No chemical pesticides are used. Manual picking.
- In the basement: Grapes are pressed immediately. Fermentation with vineyard-specific yeasts. Malolactic fermentation. Maturation in wood. No fining, no filtering. When bottling, a small amount of sulphite is sometimes added.
