A meeting of dried citrus and tropical fruits. Fruit galore! An almost bright yellow color with a nice nutty nose and wonderfully ripe thanks to the botrytis. Well rounded and a nice acidity which still preserves the freshness despite the sugar. Beautiful dessert wine from the Loire from Pithon-Paillé.
The Domaine Pithon-Paille was founded in 2008, but Jo Pithon (one of the four founders) has been working his vineyards in the "low-intervention" way since 1978 (which was really unheard of at the time). Pithon-Paille is therefore rightly a pioneer in the natural wine movement. Around 2018, a lot has changed. Joseph has moved to the South of France (where his wife Wendy Paillé is a winemaker at Le Soula) and Jo Pithon's son did not want to become a winegrower. So problems at Pithon-Paillé because Jo Pithon is not a marketing man, he prefers to work in the vineyard. Chenin blanc fanatic Ivan Massonat (CEO of a trust fund) had been working for years in oenology and studying the different appellations of the Loire. He has taken over Pithon-Paillé and Jo Pithon continues to work in the vineyards as a winegrower! The vineyards (13 ha) are located in the Loire valley 25 km south of Angers.

In the vineyard : Terroir of mainly clay and loam on a slate subsoil. Grapes come from four different plots. Harvest by hand. Organic and biodynamic farming.
In the cellar : Juice is put away cold immediately after pressing. Fermentation only by means of our own yeasts. 1 year maturation in conical tanks and 5 year old wooden barrels from Burgundy.
