Description
Fresh soft white dessert wine from Coteaux du Layon. It is a free fresh/light white Moeulleux (sweet white dessert wine) and not at all thick or syrupy. Just more fresh, in the light tropical atmospheres like pineapple with light peach/honey/apricot and just with nice acids.
Château de Passavant was built by Foulques Nerra in the 12th century on an old fortress site on the Layon river. The wine cellar, on the other hand, is very modern.
In the vineyard: Slate soil with sometimes sand or gravel, vineyards are located 60 m above sea level, good natural drainage. Manual harvest.
In the cellar: 5-7 days maceration, between 6 and 12 months on the lees.

- Goes well with: Foie gras, 'tropical' stone fruit, apple, (stewed) pear desserts, light cheese, slightly sweet desserts. After opening, cork the bottle and refrigerate the wine for (at least) a month.
