Special wine from Chavost, because it is made from 100% Pinot Munier! You see that more often, but not very often. Smells cheerfully berry and appley, is precise and elegant, like a bite from a fresh pear, like a flowering hawthorn bush in spring. Can you do anything with this? Oh, taste it yourself and give your poetic freedom a push.
Founded in 1946, the Chavost cooperative is located in the village of Chavot-Courcourt, just south of Epernay. Recently, the range has been expanded with a line of Champagnes that are made without additives and sulphites, from a total of 5 hectares of 'project'. In 2023 for the first time officially certified Organic!

- In the vineyard: Vineyard with a soil of clay on limestone subsoil . Northern exposure. Manual picking.
- In the cellar: Only the juice of the first press (Cuvée), spontaneous alcoholic and malolactic fermentation on stainless steel, traditional method, Zero Dosage. No clarification or filtration. No sulphites are added anywhere in the production process and bottling.
