Ever heard of the AOC Bourgogne Tonnerre? It is an area of origin that you don't see that much but has been around for a while. Bourgogne Tonnerre is located in the Chablis region and white wine is made from Chardonnay. Jérémy picked that up when he bought a plot just above the city of Chablis in 2020. Always biodynamically farmed, the vines a bit older, a well-made bed... But then still making wine! It is crystal clear, has a pleasant mineral expression, a fine acidity and a good structure. The wood maturation gives a pleasantly noticeable nutty and creamy tone.

In the vineyard: Biodynamic farming. Gravel soil with limestone. The grapes were planted between 1990 and 1996.

In the wine cellar: After sorting the fruit, it is gently pressed and spontaneous fermentation starts. Minimum 16 months maturation in wooden barrels, then bottled without filtering and clarifying. Sulphite minimal.
