- In the vineyard: Organic viticulture. Grapes harvested at night. Terroir of limestone, loess, marl and clay.
- In the wine cellar: Slow pressing, cold fermentation for three weeks. Maturation sur-lies on stainless steel for 3 months. In the winery, the grapes and mash are not pumped, but fed by gravity into the fermentation tanks, where they ferment slowly in a cool place for a good three weeks and then three months on the yeast. This makes the wine as light as a feather.
