Rich and aromatic Chenin Blanc, which still feels firm (due to the very clear backbone of beautiful acids).
Château de Passavant was built by Foulques Nerra in the 12th century on an old fortress site on the Layon river. The wine cellar, on the other hand, is very modern.
In the vineyard: Slate soil with sometimes sand or gravel, vineyards are located 60 m above sea level, good natural drainage. Manual harvest.
In the cellar: 5-7 days maceration, between 6 and 12 months on the lees.
