The Albillo from 4Monos!
Its full name is 'Albillo Real', a white grape that ripens relatively early and can withstand the scorching heat of the region. In this case, 100+ year old vines that are planted at altitude. After fermentation, the wine matures for a good number of months in wooden barrels, which only benefits the taste. 'Benefits', hear us talking. The wine has become heavenly! Smells like ripe apricots with a lick of honey, tastes fine, creamy and ebbs away for a long time. Here in the office, comparisons were made with good white Rhône. Is that allowed? Apparently.

In the vineyard: Organic farming. Soil of weathered granite and sand. 100+ old vines, shrub planting at 730 to 800 meters altitude.

In the cellar: 18 days skin maceration with the whole bunches, spontaneous fermentation, maturation for 9 months in used oak barrels of 300, 500 and 600 liters. Minimal use of sulphites.
