Description
 Normally Jérémy makes one wine per plot, but from 'Les Veuillots' he makes 3 different wines, only the maturing process differs.
 Les Veuillots is a family plot of 1.7 hectares and has an enormous plant density. With an exposure to the south and a marl-limestone soil it is a special vineyard. Jérémy decided to make 3 different wines from it, the difference is in the maturation: stainless steel, cement egg or a wooden barrel.
 
This is the 'Ovoid' version, matured in an egg-shaped concrete vat. Why egg-shaped? The shape and the volume are calculated according to the rules of the golden ratio and thus promote the development of the so-called 'Brownian movement'. These movements allow the yeast to mix naturally and continuously without human intervention. The result is a version of Veuillots that is slightly more aromatic and 'thicker', while the wine is also distinctly fresh and mineral. Well done!

In the wine cellar: After sorting the fruit, it is gently pressed and spontaneous fermentation starts. This 'Ovoid' version then matures further on concrete. Bottling without filtering & mini pinch of sulphite.
